Community Supper

On Wednesday, March 29th, Plumas Christian School hosted Community Supper at the United Methodist Church. Families participated in organizing, cooking, and serving breakfast for dinner. The Community Supper is an incredible annual opportunity to look forward to and serve our community, and is a blessing in return. This is a free event for anyone to attend every Wednesday at 6:00pm at the United Methodist Church. Thank you all for your service!

Mexican Brunch Pie

After the Community Supper, organizer Christianna Nielsen received several requests for her egg casserole recipe, so here it is:

Mexican Brunch Pie
5 eggs, beaten
2 tbsp. butter, melted
1/4 c. all-purpose flour
1/2 tsp. baking powder
1 c. cream-style cottage cheese
2 c. (8 oz.) shredded cheese
1 (4 oz.) can chopped green chilies, drained (10 7 oz. cans)
Combine first 4 ingredients in a mixing bowl, beat well. Stir in remaining ingredients, and pour into a well-greased 9-inch pie plate.
Bake at 400 degrees for 10 minutes; reduce heat to 350 degrees, and bake about 20 minutes or until set. Cut into wedges to serve. Serves 8.
